I'd use omit author (in the Word add-on) and use (Year, date) throughout in those cases, especially when you have two different works by the same author cited nearby -- it's a bit confusing what the final citation refers to in the example above.

Oveleaf has Zotero integration, as has RStudio (which you can also just use as a Markdown editor, no need to use with R) and you can use Markdown (with pandoc) more generally and keep your references in Zotero, yes: many people do.

You can turn off sync, yes. You won't have web/mobile access to your library and it's one less source of back-up (so you'll need to be extra sure to have good local back-ups), but functionality-wise it doesn't have any other impacts.

Test this is a fresh document. I'm almost certain that the screenshotted citations cannot be generated from the data using Zotero's APA7 style. I'm guessing they rely on other version of the metadata (potentially since deleted from your library).
