When opening a PDF file for reading, a large amount of memory is consumed. But, I only opened two pdf tab. I haven't installed many plugins, only three. Worse still, when you close all the pdf tabs, your memory won't be released in time.
No one is saying you should not use any plugin at all, this just a diagnostics step.
The idea is to identify if a plugin is the cause, and if yes which one. Then you can report the problem to the relevant plugin developer so that they can fix it. If the problem is really Zotero itself, i.e. the problem happens without any plugin, the Zotero developers will be able to take a closer look.
