Why did I think it does? Because it is shown as part of the title (in the title column) and my understanding is that for tags to be shown there, they have to have a colour. Is there any other way how tags can show up in the title column?

If that's what it's supposed to say, I didn't catch that. It just says that they are shown in the item list, not that they are displayed within the title column.
For coloured tags, the text is clear: "Colored tags appear as small colored squares next to items' titles in the center pane."
If emoji tags are treated exactly the same, why not describe it exactly the same way?

I see no way of removing the colour from a tag (i.e. turning it into a non-coloured tag.

There is no "Remove Color" option.
If you think something isn't working, we'd need to see the whole process you're following, including the original tag, along with a Report ID.
