Hello,
Is it possible to create a new item type to add to the list? For example, I would like to create an item type to store dissertations. Would this be possible? and how?

No, that's not possible.
You have an item type called "Thesis" specifically for what you're looking for.

Many thanks, I hadn't noticed it. I'm new to Zotero and transitioning to it slowly from Endnote where it is possible to create new item.
