How to properly select a Citation style and make it my default setting

I'm still a newbie to Zotero version 7.0.11. After delving into the Help features I remain unclear about how to make a Citation Style "stick," especially using the drag and drop feature as well as viewing the Preview plugin citation info. I go to Style Manager and select my preferred bibliographic style, but when I drag using the Cite feature it just always remains at a default style I do NOT want. Not sure what to do. It's got to be something simple I'm just not grasping, so apologies in advance and thanks for any additional help you can provide.

The quick format default citation style is set under "Export" in the preferences:

I don't think the Preview plugin still works on Zotero 7? You can set the format for the Item Pane Header on the right in the General tab of the preferences:

(note that "Bibliography Preview" is a custom style I use, so you won't have that available)
