This is on purposes. The idea of Zotero is among other things to have data than can be shared and exchanged easily. Too much customization makes that difficult
Instead of keywords I'd suggest using tags, anyway, they are much more powerful.
Apart from that - please do search the forums before asking any more questions -
searching for "add field" would have given you a lot of results clarifying that the fields are hard-coded.
