Why can't store DOI information in book chapter type?
I see that many publishers offer DOIs, such as Emerald.

A DOI field will be added to all item types in the not-too-distant future. There just haven't been any type/field updates in Zotero in over a decade for technical reasons.

You can add "DOI: 10.1234/abc" to the Extra field now to add a DOI in citations for item types where there's not yet a dedicated field.
