It started with several footnotes turning red, with a warning I need to reconnect them, then when trying to add additional citations in, they would just come up as 'Uploading' in the footer. It's a pretty heft paper (8,000 words with 40 figures and 10 tables), and now Zotero won't let me add any citations in. I get a wanting saying google doc authentication was cancelled.

Restart your browser and Zotero, and when you try again, if it asks you which Google account to use, make sure you choose the account that you used to create the document (unrelated to any Zotero account).
There's also currently a separate, unrelated issue with Google Docs, which started after you posted here:
I have about 30 unliked documents now on top of this. Tried restarting, opening/closing, and updating. I actually cannot believe this. The amount of work this added onto an 8000 thesis is insane that is now overdue thanks to this malfunctioning software.
@zoeblow: That "Internal error encountered" error can happen in some documents when using Google Docs integration v2 due to a Google bug.
If you're using Chrome, Firefox, or Edge and switched to v2 because of the brief outage yesterday discussed in the other thread, you should revert to v1 in the Advanced pane of the Zotero Connector preferences.
If you're using Safari, update to Zotero 6.0.17, available now, which should revert it to v1 automatically.
Then reload Google Docs and try again.
Sorry for the trouble. There's been some turbulence with Google Docs integration over the last couple days, but it should work now as long as you're using the latest version of the Zotero and the Zotero Connector and have Google Docs integration v2 turned off.
(For context, v2 is a new, much faster version of the plugin, but it unfortunately doesn't work in all documents due to that Google bug. v2 happened to avoid the outage yesterday, so we temporarily advised turning it on, but it's now generally better to leave it off until Google fixes the bug.)
