It's very likely an upstream issue that we can't really fix, but if you can give us some details (like an ISBN or DOI and what it says in the "Library Catalog" field in Zotero if anything), we can take a look.
Yeah, that's just how Wiley has deposited this with CrossRef, which is where Zotero gets the metadata. There's literally nothing we can do about this, I'm afraid: it's not that Zotero uses the wrong encoding, it's that the correctly encoded information is just not there.
