The new note editor supports Markdown syntax for creating lists. If you don't want that, you can press Cmd/Ctrl-Z after the auto-conversion to revert to the original character.
We could consider making it possible to disable Markdown syntax conversions, but you're the first to object to this in a year of beta testing.
I want to go back to the prior version. Thankfully I made a backup of my db before upgrading. How do I re-download an old version?

But are you saying that your existing notes that began with "+" or "-" now start with bulleted lists? That's not intentional, and we can help you undo that if that's the case.
You can install an older version by modifying the download URL, but reinstalling an older version is not the solution here — old versions aren't supported and will stop syncing in the future.
Support will end and the software will eventually become insecure and likely stop working, so you'll have to find a way to make this work with the new note editor or switch to a different software entirely.

I wasn't a beta tester.
Above you made it sound like you had to fix all your old notes. Did you just mean that to use a consistent system you'd have to edit the old notes if you couldn't keep using "+" and "-"? I explain above how to undo the "+" and "-" auto-conversion as you type. And as I say, we could consider turning this off, though Markdown auto-conversion makes it very easy to use rich-text formatting in notes, and using undo is simple when you want to use "+" or "-" explicitly. I understand — but thousands people were, so I'm just explaining that this is particular to your note-taking system.
Existing Notes: All bullets now look the same. Where once different levels had different symbols, now they all have the same black dot and there is no way to repair it that I can find. All outlines (I/A/1/a) have lost their indents, and again, there doesn't seem to be anyway to repair it
New notes: There is no way to create different levels in lists whether bulleted or number. No indenting, no format changes for each different level.
While you note that the new version was in beta testing for a year, this is the first I have heard of it. There were no emails to that effect, no messages, no nothing. I guess if I spent time on the website, I might have heard something about it, but, so long as everything was working fine, I had no reason to go to the website.
Isn't
Tab/Shift-Tabnot sufficient to create different levels in a list?
