Is there any guidance on how to uninstall Zotero Plugins/Extensions (Get DOIs)?

You can uninstall plugins from Tools → Add-ons.

Are you having a problem with DOI Manager? If so, I’d like to hear about it and fix it.
If you just want to disable automatic retrieval of DOIs or ShortDOIs, you can do that from Tools -> Automatically get DOIs for New Items
