Apparently Empty Citation Field
In the early process of learning Zotero. [Configuration is Zotero 3.0.7, Firefox 12.0, MS Word 2010]
When in Word, with the cursor where I want the citation to appear in the middle of text, I click on Zotero Insert Citation, and choose the appropriate reference and type in the page number - but I don't know what to do next to make that info appear in the text. At that point, I can tell that a data field exists.
What final step(s) am I missing?

If you're using the new quick format insert citation dialog (the default), what you do is:
1. type a search term into the box
2. select a citation
2a. potentially add a page number and prefix
http://www.zotero.org/support/word_processor_plugin_usage#quick_format_citation_dialog
and press return
3. Press return again to confirm.
Zotero will insert a formatted citation that can take three forms:
1. An author-date citation in parentheses, this would be a Harvard style or APA (Smith 1776)
2. A Footnote, with the citation inserted in the footnote. This would be Chicago Manual of Style and related styles
3. Just a number. That would be Vancouver, Nature, IEEE style etc. The references corresponding to the number will show up when you insert the bibliography.
