Creating new item types

I've been a devoted Zotero user for a long time now. Recently I started working at a foundation, and I think Zotero would be a great tool for managing our proposal review process. But to do that, I would have to create a couple of new item types -- one for proposals (with fields like Project Leader, Organization, Request Amount, Start Date, etc.), and perhaps one for external reviewers. I haven't been able to find any guidance in the documentation on how to do this. But I did notice that the National Science Foundation (NSF) apparently has customized Zotero for a similar purpose. Can anyone give me some advice on how to make this happen?

    We customized Zotero for NSF, but that functionality isn't really ready to be used for other things. It likely will be in the future, though.

    Was the NSF customization a one-shot thing, or might Zotero be willing to consider a similar arrangement with other organizations?
