I didn't download Java because the program wanted me to change my browser to internet explorer. I have windows 10 which doesn't suggest using internet explorer! Do I need to use Java in order for this program to work?

You need Java if you want to use the LibreOffice plugin. If you're using Word or not using a word processor plugin then you don't. But you certainly don't need to use Internet Explorer in any case. I'm not sure what prompt you're referring to, but just say no if it asks you to change your default browser.
